Prepare the ingredients:
– Cut tomato into wedges
– Cut a slit in the chilli padi
– Cut the limes into wedges
– Slice the galangal
– Clean the prawns and clams
– Clean and prep the squid (separating body and tentacles, cut the tentacles, slice open the body, remove the outer skin layer and score the inside part with criss cross lines)
In a pot, boil water with the sliced galangal, chilli padi, kaffir lime leaves, tom yum paste, chilli paste, fish sauce and lime juice. Let it boil for about 10 minutes.
Then add in the tomato wedges, oyster mushrooms, prawns and clams.
Continue boiling for a few minutes before adding in the squid together with the white pepper, salt and chicken stock powder.
Stir until well combined and add in a bit more lime juice at the end to freshen the flavour.
