– Cut the chicken meat into cubes
– Trim the ends of the enoki mushrooms
– Mince the garlic
– Slice the leek, spring onions, yellow onion and tofu
– Soak the glass noodle in hot water
In a pot with water, add in kimchi, chicken meat, Gochujang, Gochugaru, garlic, leek, yellow onion (if you opt to include), enoki mushrooms, tofu and soaked glass noodle. Stir to combine all the ingredients.
Simmer for 15 – 20 minutes until the chicken meat is cooked through.
Garnish with spring onions and serve with rice. Enjoy!
