Ingredients

  • 10 medium-sized prawns
  • 1 onion
  • 5 shallots
  • 1-inch ginger
  • 4 garlic
  • 5 tbsp cooking oil
  • 2 tbsp ground chilli paste
  • 1 cup coconut milk
  • 2 tbsp tomato sauce
  • 2 tbsp kerisik
  • 2 dried tamarind
  • 1 stalk lemongrass (bruised)
  • 1 tsp salt
  • 1 tbsp palm sugar
  • 3 star anises
  • 3 cardamoms
  • 2 cinnamon sticks
  • 1 tsp cumin seed powder
  • 1 tsp fennel seed powder

Method

  1. In a blender, blend onion, shallots, garlic and ginger until fine.
  2. In a pan, heat up cooking oil. Saute the blended mixture together with the star anises, cinnamon stick and cardamoms until fragrant.
  3. Then add in lemongrass stalk, fennel seed powder, cumin seed powder, ground chilli paste. Fry until the oil rises to the top.
  4. Add in dried tamarind, tomato sauce and kerisik. Fry evenly.
  5. Pour in coconut milk and cook until gravy thickens.
  6. Place in the prawns and stir to combine.
  7. Once prawns are cooked, season with palm sugar and salt to taste before removing from the heat.
