Heat up 2 tbsp of oil in a pan and cook the chopped red onion until soft.
Add in the chopped garlic and cook until mixture is fragrant.
Then add in the minced chicken and continue frying until meat is almost cooked.
Season with curry powder, chilli powder and salt. Mix evenly and set the mixture aside for later.
Beat 2 eggs in a bowl then add in some chopped green chillies, chopped red onions, 3 tbsp of the cooked chicken mixture and season with salt and ground black pepper. Mix until well-combined.
Slice the hot dog buns in half and butter both sides of the bread. Lightly toast the buns (butter side down) on a pan over medium heat until crisp and golden brown. Set aside.
Add the chicken egg mixture into the pan. Once the egg is slightly cooked, push the mixture into the middle of the pan to gather them nicely.
Once the egg is almost done, place the hot dog bun (butter side down) over the egg and press down lightly.
Flip them over and toast the other side lightly.
When done, place the sandwich on a plate. Spread with mayonaise and chilli sauce and top with some cucumber slices before closing the sandwich together to slice into two pieces.
