Pork Trotter with Sea Cucumber

Ingredients

  • 1/2 pork trotter (chopped into pieces)
  • 1 sea cucumber (pre-soaked and chopped into pieces)
  • 10 shiitake mushroom
  • 6 slices sliced ginger
  • 5 cloves garlic (lightly crushed)
  • 3 roasted garlic
  • 1/2 tsp salt
  • 1 tbsp dark soy sauce
  • 3 tbsp soy sauce
  • 1 tbsp rock sugar
  • 2 tbsp cooking oil
  • 1 litre water

Method

  1. Blanch the pork trotter with 3 ginger slices until the scum appears.
  2. Then retrieve and place in a bowl of water to clean them. Drain and set aside.
  3. Heat pot with cooking oil over medium-high heat. Saute 3 ginger slices and the garlic cloves until fragrant.
  4. Place in the blanched pork trotter. Fry well.
  5. Add in soy sauce and dark soy sauce. Mix evenly.
  6. Pour in 1 litre water, then add in the shiitake mushrooms, roasted garlic and rock sugar. Mix until well-combined.
  7. Cover the pot and switch to low heat to simmer for 45 minutes.
  8. Then add in the sea cucumbers. Stir and mix evenly.
  9. Cover and simmer for another 15 minutes.
  10. Add salt, then cook until sauce slightly thickens.
