- 1/2 pork trotter (chopped into pieces)
- 1 sea cucumber (pre-soaked and chopped into pieces)
- 10 shiitake mushroom
- 6 slices sliced ginger
- 5 cloves garlic (lightly crushed)
- 3 roasted garlic
- 1/2 tsp salt
- 1 tbsp dark soy sauce
- 3 tbsp soy sauce
- 1 tbsp rock sugar
- 2 tbsp cooking oil
- 1 litre water

Method
- Blanch the pork trotter with 3 ginger slices until the scum appears.
- Then retrieve and place in a bowl of water to clean them. Drain and set aside.
- Heat pot with cooking oil over medium-high heat. Saute 3 ginger slices and the garlic cloves until fragrant.
- Place in the blanched pork trotter. Fry well.
- Add in soy sauce and dark soy sauce. Mix evenly.
- Pour in 1 litre water, then add in the shiitake mushrooms, roasted garlic and rock sugar. Mix until well-combined.
- Cover the pot and switch to low heat to simmer for 45 minutes.
- Then add in the sea cucumbers. Stir and mix evenly.
- Cover and simmer for another 15 minutes.
- Add salt, then cook until sauce slightly thickens.
