Ingredients

Milk Barfi:

  • 250g milk powder
  • 150g sugar
  • 120ml milk`
  • 120g ghee
  • 1/4 tsp cardamom powder
  • 1/4 tsp salt
  • 1ml red food colouring
  • 1ml blue food colouring

Kesari:

  • 8 tbsp ghee
  • 200g Rava flour (semolina flour)
  • 2 tbsp cashew nuts
  • 2 tbsp raisins
  • 200g sugar
  • 400ml boiled water
  • 1g saffron
  • 1/4 tsp cardamom powder
  • 1/4 tsp salt

Method

Milk Barfi

  1. Coat 2 bowls with some ghee.
  2. Melt ghee in a pot.
  3. Then pour in milk and milk powder. Mix until no lumps.
  4. Add in sugar and mix well.
  5. Cook for about 15 minutes until the mixture thickens.
  6. Mix in cardamom power and salt.
  7. Once finished cooking, divide the mixture into the 2 bowls.
  8. Add in red and blue food colouring respectively in each bowl. Mix well.
  9. Line the parchment paper in a glass dish and spread with some ghee to avoid sticking.
  10. Pour in red mixture at the bottom as base and spread out evenly, followed by the blue mixture as the top layer.
  11. Let the mixture set in the dish for at least 10 minutes.
  12. Remove from the dish and cut into your desired shape and top with a piece of cashew nut before serving.
  13. Enjoy!

 

Kesari

  1. Melt ghee in a pot. Then scoop out 2 tbsp/1 ladle to reserve for later.
  2. Sauté cashew nuts and raisins in the melted ghee. Save some for garnishing.
  3. Then pour in the rava flour and cook for 5 minutes until well-combined.
  4. Add in saffron and sugar. Stir evenly.
  5. Pour in boiled water, then add in cardamom powder, salt and the reserved ghee. Stir to combine well.
  6. Cover the lid and cook for about 5 minutes.
  7. Once done, mix well before serving. Garnished with the sauteed cashew nuts and raisins.
