Ingredients

  • 2 mud crabs
  • 10 dried chillies (soaked)
  • 5 red chillies
  • 3 chilli padi
  • 6 shallots
  • 8 garlic cloves
  • 4 galangal slices
  • 1 stalk lemongrass
  • 1 green lime (juice)
  • 2 tbsp belacan
  • 5 tbsp ketchup
  • 1 tsp fermented bean paste
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 1 cup hot water
  • 2 eggs (beaten)
  • 1 pack mantou
  • Cooking oil

Method

  1. Clean and prepare the crabs (remove gills and cut them into quarters)
  2. Blend re-hydrated dried chillies, red chillies, chilli padi, shallots, garlic cloves, galangal and lime juice into a paste.
  3. In a pan, add in the belacan and 5 tbsp of oil and stir for a few seconds.
  4. Then add in the blended paste and stir fry until it is aromatic before adding in the fermented bean paste, ketchup, sugar and salt. Stir until well-combined.
  5. Add in the crabs and stir fry until they are well-coated.
  6. Pour in the hot water. Cover and simmer for 8-10 minutes.
  7. While waiting, deep fry 1 packet of mantou (as per package instructions) then set them aside.
  8. When the crabs turn bright red,  mix in 2 beaten eggs and stir until well-combined.
  9. Serve the crabs with the fried mantou on the side and garnish with some chopped spring onions, coriander and sliced red chillies.
