Butter Cookies with Icing Decoration

Ingredients

Cookies:

  • 3 cups unbleached flour OR all-purpose flour
  • 250g unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1/2 tbsp vanilla extract
  • 2 eggs

Icing:

  • 3 cups powdered sugar
  • 2 egg whites
  • 1/2 tsp lemon juice
  • 1 tsp vanilla extract

Method

  1. In a bowl, mix in the flour, granulated sugar, unsalted butter and eggs. Knead the ingredients together with your hand until a dough paste is formed.
  2. Add in the vanilla extract and continue kneading until the dough is well-formed.
  3. Pre-heat the oven at 175°C.
  4. Place the dough in between 2 sheets of cling wrap then roll out the dough into a thin layer or any desired thickness (make sure it’s not too thick).
  5. Cut the dough into any shape(s) you prefer using cookie cutters and place them on a baking pan lined with parchment paper.
  6. Baked the cookies for 10 – 12 mins until golden. Thicker cookies will need to bake for a few more minutes longer, so do adjust baking time accordingly.
  7. Once done, set the cookies on a wire rack to cool down before you can decorate them (if the cookies are still hot, the icing will melt).
  8. In a bowl, mix the powdered sugar, egg whites, lemon juice and vanilla extract until well-combined. The consistency will be similar to condensed milk.
  9. Divide the mixture into several smaller bowls and add in one small drop of food colouring into the respective bowls. You can have as little or as many colours as you like.
  10. Insert the icing into individual piping bag, snip of a small part of the ending to form the piping mouth and it’s time to decorate away!
  11. After decorating, set the cookies aside for 15 to 30 mins to let the icing to dry and set completely.
  12. Enjoy with a cup of coffee or tea, or even milk if that’s what you prefer.
