Ingredients

Apple Pie Filling:

  • 4 green apples
  • 2-3 cinnamon sticks
  • 50g sugar
  • 250ml wter

Mooncake Crust:

  • 125g unsalted butter
  • 250g flour
  • 25g sugar
  • 1/4 tsp salt
  • 1 egg yolk

Others:

  • Egg wash
  • Sesame seeds
  • Ice cream of your choice
  • Raspberry sauce

Method

  1. Peel and cut the apples in cubes.
  2. In a pot, add in the apple cubes and the rest of the filling ingredients.
  3. Cook using high heat for about 15-20 mins, stirring constantly, until mashed up and the liquid has evaporated completely.
  4. Place the mixture into a bowl and set aside to cool.
  5. In a mixer, mix the crust ingredients together until it becomes crumbly.
  6. Pour the mixture out onto the work surface and gently press together until the dough comes together.
  7. Use a rolling pin to roll out the dough into 0.5cm thickness.
  8. Cut out the dough using ring cutters. Smaller ring for the base, bigger ring for the top.
  9. Dock the cut dough with a fork.
  10. Apply the apple pie filling on the smaller dough then wrap the bigger dough to shape into a dome, gently sealing the sides.
  11. Place them onto a baking tray lined with parchment paper
  12. Preheat oven to 180°C.
  13. Brush with egg wash and sprinkle some sesame seeds on top.
  14. Bake at 180°C using conventional mode (top & bottom heating) for 15 mins or until golden brown.
  15. Serve with ice cream and raspberry sauce.
