Ingredients

  • 15 small red onions (chopped)
  • 10 cloves garlic (minced)
  • 5cm ginger (minced)
  • 1 green chilli (sliced in half)
  • 3 cardamoms
  • 3 star anise
  • 3 cloves
  • 3 cinnamon sticks
  • 6 stems curry leaves
  • 1/4 cup cooking oil
  • 1kg mutton (chopped)
  • 4 tbsp meat curry powder
  • 1 tbsp cumin powder
  • 1 tbsp chilli powder
  • 3 tsp turmeric powder
  • 2 tomatoes (chopped)
  • 3 potatoes (chopped)
  • 1 1/2 cup water
  • 2 tbsp salt
  • 1/2 cup coconut milk
  • 1 stalk coriander (chopped) (save some for garnishing)

Method

  1. Heat up oil in a pot, add in cinnamon sticks, cardamom, star anise and cumin. Stir until fragrant.
  2. Add in chopped red onions and continue stirring until fragrant.
  3. Then add in the sliced green chilli and stir for about 3-4 minutes until onions are slightly brown.
  4. Place in curry leaves and stir for a minute.
  5. Add in minced garlic and ginger, and stir for another minute.
  6. Next, add in the chopped mutton. Stir until the mutton are well mixed with the ingredients.
  7. Season with turmeric powder and stir until well-combined.
  8. Cover and simmer on medium heat for 5 minutes.
  9. Remove the lid, stir and let it simmer until moisture is evaporated.
  10. Then add in the chopped potatoes and chopped tomatoes. Stir until well-combined.
  11. Add in chilli powder, cumin powder and meat curry powder. Continue to stir until evenly mixed.
  12. Pour in water and bring to a boil.
  13. Season with salt (you may omit if it’s salty enough for you), cover and simmer for 30 minutes.
  14. After that, add in coconut milk and chopped coriander. Stir until well-combined and it is ready to serve.
