- 10 medium-sized prawns
- 1 onion
- 5 shallots
- 1-inch ginger
- 4 garlic
- 5 tbsp cooking oil
- 2 tbsp ground chilli paste
- 1 cup coconut milk
- 2 tbsp tomato sauce
- 2 tbsp kerisik
- 2 dried tamarind
- 1 stalk lemongrass (bruised)
- 1 tsp salt
- 1 tbsp palm sugar
- 3 star anises
- 3 cardamoms
- 2 cinnamon sticks
- 1 tsp cumin seed powder
- 1 tsp fennel seed powder

Method
- In a blender, blend onion, shallots, garlic and ginger until fine.
- In a pan, heat up cooking oil. Saute the blended mixture together with the star anises, cinnamon stick and cardamoms until fragrant.
- Then add in lemongrass stalk, fennel seed powder, cumin seed powder, ground chilli paste. Fry until the oil rises to the top.
- Add in dried tamarind, tomato sauce and kerisik. Fry evenly.
- Pour in coconut milk and cook until gravy thickens.
- Place in the prawns and stir to combine.
- Once prawns are cooked, season with palm sugar and salt to taste before removing from the heat.
