Ingredients

  • Half whole chicken (cut into pieces)
  • 20g red chilli
  • 10g galangal
  • 5g fresh turmeric
  • 20g garlic
  • 50g red onion
  • 50g gulai paste
  • 15g chicken masala powder
  • 20g curry powder
  • 50g turmeric juice
  • 5g brown sugar
  • 5g salt
  • 2 cups water
  • 100g fresh coconut oil
  • 5ml cooking oil

Method

  1. In a blender, blend red chilli, garlic, red onion, galangal, ginger and fresh turmeric until smooth.
  2. Preheat oil, then stir fry blended chilli paste.
  3. Add in gulai paste, curry powder and chicken masala powder. Stir fry until fragrant.
  4. Then add in the chicken and mix until combined with the spices.
  5. Pour in water and bring to a boil.
  6. Add in coconut milk, cover and cook for 35 minutes at low heat until chicken is tender.
  7. Lastly, add in turmeric juice, brown sugar and salt. Stir to combine well and let it boil for 2-3 minutes.
  8. Enjoy with a plate of rice!
