Curry Cauliflower Burger with Mango

Ingredients

  • 3 – 4 burger buns
  • 100g cornstarch
  • 450ml water

Burger Patty

  • 1.2kg cauliflower
  • 450g potato (sliced)
  • 300g red onion (sliced)
  • 35g garlic (sliced)
  • 30g cumin
  • 50g fenugreek seeds
  • 50g curry powder
  • 5g turmeric powder
  • 10g white pepper powder
  • 20 curry leaves
  • 300ml olive oil

Puree

  • 250g Japanese cucumber (diced)
  • 30g shallot (minced)
  • 25g salt
  • 12g sugar
  • 200g mayonnaise
  • 200g natural yoghurt

Garnishing

  • Yellow onion rings
  • Tomato slices
  • Green coral lettuce
  • Mange slices
  • Cheese slices

Method

Burger Patty
1. Dice the cauliflower into small pieces.
2. Slice the garlic, red onion and peeled potato. Set aside.
3. Mix the curry leaves, cumin, fenugreek seeds, white pepper powder, turmeric powder and curry powder with olive oil until turned into spice paste.
4. Place the diced/ sliced ingredients with spices paste, mix well.
5. In a large pot, saute the mixture with olive oil until fragrant.
6. Pour in 450ml of water, simmer for 15 minutes.
7. Then blend the mixture thoroughly.
8. Add corn starch to the blended mixture, mix well.
9. Pour some olive oil around the ring mould. Put the blended mixture into the ring mould.
10. Pan fry for 5-10 minutes until the patty is crispy on both sides.

Puree
1. Mix the mayonnaise and natural yogurt until well combined.
2. Add in the diced Japanese cucumber and minced shallot, mix well.
3. Season with salt and sugar.

Assemble
1. Sear the burger crown and heel with olive oil and sliced garlic, set aside.
2. Place the green coral lettuce on top of the burger heel. Followed by the patty.
3. Garnish with sliced tomato, onion rings and mango slices.
4. Top with the purée and cheese.
5. Optional: use a blow torch to burn and melt the cheese surface.
6. Burger is ready to serve. Enjoy!
